The pioneer winemaker and spokesperson in the biodynamic world is the Frenchman Nicolas Joly, although even today the specifications defining what is and how a biodynamic wine is made are being defined at European level (in Demeter International). However, we know with certainty that biodynamic agriculture is based on the idea of balanced nature, so that a biodynamic wine is only a consequence of how this agriculture is defined.
The characteristic appearance of the biodynamic wine is given by the link with the land and by the reconstitution of the natural fertility of the soil.
It is therefore important to keep the soil naturally balanced with all its organisms in order to obtain healthy grapevines of high quality.
Briefly in biodynamics, no chemicals and GMOs are used and the soil is processed using traditional methods (no tractor is used). All this with the aim of regenerating and revitalizing the land so that the vines can take root and endure periods of drought or rain.
As an antiparasitic treatment, plants are sprayed with infusions such as nettle, chamomile, fennel, valerian and bark; better still if oaks are placed among the vines because there will be insect motions to keep away the pests.
Another characteristic of the biodynamic discipline is that of following the lunar calendar also as regards racking and bottling.
Pale lemon in colour. On the nose, this wine showcases vibrant lemon, lime and pink grapefruit characters along with green apple and a dash of fresh herbs. It has nice mid-palate weight and texture and a fine acidity. Bright and aromatic, it has become known as a benchmark for Adelaide Hills and Australian Sauvignon Blanc.
Straw-yellow colour, fruity and floral scent, intense and persistent. Taste fresh, dry, velvety with hints of pineapple and apple, soft and persistent.
On the nose, bright red fruit aromas are coupled with savoury herbal notes and a hint of sweet spice. On the palate, the concentrated flavours are well balanced with silky, fine-grained tannins and crunchy acidity, bringing great finesse to this wine.
This wine has aromas of cherry, rosehip and spices with enticing savoury undertones of truffle and autumnal earth. Supple and elegant on the palate, the wine has good concentration and fine, smooth tannins that lead to a long, lingering finish.
This wine has a beautiful ruby red color. The nose is characterized by hints of red berry fruit, such as plum and cherry, then a delicate spiciness completes the olfactory picture. The taste is guided by a nice tannic texture, juicy, with good body and good persistence.
Deep red in colour with purple hues. On the nose, there are plum and pomegranate aromas that are accompanied by lifted floral notes. The palate has a very attractive blend of juicy dark cherry, blueberry and hints of spice. Well-balanced acidity is backed by fine-grained tannins on the long savoury finish.
A bouquet of crushed strawberries, sweet spice is complemented by floral notes of violet and hawthorn. Powerful and generous, with a velvety texture and a revitalising freshness, this wine is built on tension and stamped with a brilliant salinity
This wine has a beautiful golden colour in the glass. A creamy and powerful Meursault - round and rich on the palate, with orchard fruit characters. It is lifted on the finish by vibrant acidity.
A delightful combination of aromas of freshly cut grass, spices and vanilla supported by tropical notes. Vibrant stone fruit flavours are lifted by citrus notes on the palate. This is a complex wine with toasty characteristics from the barrel fermentation and ageing.
Aged in Tinijas shows the fresh and complex flavours of this wine. Ripe tangerines from the Verdil, sweet spice from the PX, balanced with fresh and mouth watering citrus, melon and a touch of biscuit from the Chardonnay and Macabeo. Finishing with a rich and creamy mouth feel that makes this wine a true show case of its style.

This wine is a brilliant ruby red colour. The nose is pronounced, displaying aromas of cherries, wild blackberries and currants, with balsamic hints reminiscent of the Mediterranean brush and notes of pepper and vanilla. The palate is full-bodied with supple and silky tannins that linger on the long finish.
A smooth, but dense wine with powerful black plum and berry fruits which are underpinned by a mineral complexity. Concentrated and spicy, with great structure and a long, firm finish.

Pale amber in colour, this wine is complex with aromas of orange blossom, negroni-like bitters, green tea and jasmine. The palate has incredible depth and concentrated with notes of peaches and cream, oregano and wild thyme, supported by a gentle salinity on the finish.
This wine is fluid...with more akin to a white wine and more alive, with fresh and bright fruit aromas and a pleasant balsamic sensation.
Garnet colour with pale red rim, ripe black fruit and liquorice. Strong saline and mineral notes, firm tannins that are evolving. A big wine with genuine terroir expression lifted by the granite minerality.
The delicate aromas of lime blossom, jasmine and quince accompanies white peach, pear and spicy notes. Medium-dry in style, the sweetness is balanced by a juicy acidity and a fine phenolic texture.
This wine is precise and fills the palate with flavours of toasted brioche and tangerines. It is incredibly concentrated with refreshing acidity and is perfectly balanced. It is drinking well now but will also develop favourably with further bottle ageing.
In the right hands, the often-overlooked Aligoté grape variety can shine. Using grapes from old vines gives this Aligoté a beautiful concentration with a lovely balance of power, richness and acidity. Notes of nougat and toasted hazelnuts carry through onto the finish.
The Meursault 1er Cru "Les Charmes" displays white peach aromas with floral notes and subtle hints of toast. The concentrated palate has a creamy texture balanced perfectly by lively acidity that follows through to the finish.
A quintessential Meursault with opulent, layered aromas of citrus fruit, white fleshy peach, and mineral notes. On the palate, it is rich and bold with concentrated flavours of stone fruit, freshly baked pastries and vanilla pod which are perfectly balanced with bright, refreshing acidity.
The nose is vibrant and spicy with aromas of bramble fruit, plum and allspice. On the palate Mourvèdre's opulent fruit profile mingles with more earthy notes of dried herbs and liquorice. The long finish is structured by chalky tannins and a fine bead of acidity. This is a wine that will reward patient cellaring.

Bright ruby to dark purple in colour, it promises plenty of power.The nose is complex with powerful aromas of blackberry and blueberry with, rose, rosemary, violets and floral notes as well as a hint of spice. The palate is nicely concentrated and with fine tannis. The flavours of blueberry, plum and blackberry are big, with hints of bittersweet cocoa and a subtle stimulating flavour of mint and violet, dark cherry, blackberry, red plum, earth, espresso, tobacco, dark chocolate, black pepper, black tea, violet. Very complex.
Floral, stone fruits with orange blossom peeking through. Bright, fresh, hints of minerality... this wine doesn't dissapoint! Tiny quantity produced, get it while you can.
Wild sweet berry fruit dominate the nose, with hints of spice, herb, graphite and salinity. A silky smooth entry leads on to full bodied flavours of sweet cherry, raspberry and nutmeg. Despite the big flavours this is still lovely and fresh, with a long finish and fine tannins.
This blend offers up a nose of fresh pear, olive, saline hints and dried flowers. Full-bodied and focused, with a lovely centre, minerality and grip, excellent acidity and a long, complex and very nicely balanced finish.
