Most of the grapes of Chardonnay Valle Central Tierra Antica were hand-picked the first week of March and only a small proportion of the fruit was machine-harvested to ensure freshness. Carefully selected bunches were fermented at 12° to 16° in stainless steel to retain freshness, aromatics and varietal characteristics. Chardonnay Valle Central Tierra Antica was stabilised for 15 to 20 days at a temperature of 4°C and then earth-filtered prior to bottling.
The grapes are carefully sourced from the Valle Central. The vines are vertically positioned, spaced at 1.5 x 2.2 m and drip irrigated. The crops are green harvested to eliminate short shoots and to concentrate the flavours in the remaining berries.
