The Tocai grapes of Collio Friulano Komjanc Simon are cultivated at an altitude of 135 meters on clayey marl and sandstone with south-east exposure. The harvest is manual in a box with selection in the vineyard; the grapes are destemmed, followed by a cold skin maceration (8 ° -10 °) for about 24 hours, after which the grapes are pressed and the flower must is statically decanted cold. After fermentation, Collio Friulano DOC Komjanc Simon is racked and left on the lees until spring, making a long series of batonnage, in order to obtain a full and fat wine in the mouth, then it will refine in glass.
The firm Komjanc Simon is an Italian height quality wine producer located on the sunny hills of San Floriano del Collio, the most beautiful area of Valerisce. The Collio is famous for the production of excellent quality wine. The firm is established on 20 Ha of land, 11 Ha of which is exclusively allocated for the vineyards. The average production is 600 Hl most of which is sold locally in Italy and the process is carried out in accordance with the latest moderns technology – with respecting to the traditional system which was always used in Collio. To ensure quality, the product is bottled and sold by the producing firm.
