The grapes of the Trentino Cabernet Sauvignon Riserva Molino dei Lessi Emma Clauser are grown on the hill of Sorni at an altitude of about 350 meters. Surrounded by coppice and bushes, natural shelters of animal species, useful for the biological fight against phytophagous animals, on terrain with rocky substratum: red siltstones of Werfen; ground cover: mainly morainic material with a medium texture, clayey, very calcareous, with good water holding capacity and southern, south-west exposure. The date of harvest is decided according to the level of maturity of the grapes. The harvest is done by hand in small containers, very early in the morning, avoiding exposing the grapes to high temperatures so the grapes arrive in the cellar perfectly intact. The vinification is in red with repeated punching down; at the end of fermentation, the wine is decanted into French oak barrels, where it undergoes malolactic fermentation and remains to mature from 18 to 20 months. The Vigneti delle Dolomiti Rosso IGT “Due Rubini” Emma Clauser after bottling spends a further period of ageing in the bottle.
NOTES: This wine is part of the “Interpretations” project.
“In the 1980s our path as farmers began: small fields on steep slopes, terraces, passable only on foot, never compacted by heavy vehicles, never weeded, surrounded by spontaneous flora, refuge of species useful to the ecosystem. This rural landscape ancient leads us to immediately choose organic farming, obtaining certification as a pioneer against the tide in 1994. Today more: Permaculture as a natural goal of proceeding with passion, respecting the rhythms of nature, observing and correcting with humility, to favor the useful relationships that make the system stable Our allies: the fauna of the soil, the insects, the “weeds”, useful food for the man and for all the inhabitants of the vineyard. The plant generously returns ripe and healthy grapes, from which a lively and long-lived wine is born, an expression of the balance achieved with a lot of patience and perseverance. ” EMMA CLAUSER
