About this wine
The Cabernet Sauvignon and Lagrein grapes of the Vigneti delle Dolomiti Rosso Due Rubini Emma Clauser grapes are grown on the hill of Sorni at an altitude of 350 meters. Surrounded by coppice and bushes, natural shelters of animal species, useful for the biological fight against phytophagous animals, on terrain with rocky substratum: red siltstones of Werfen; ground cover: mainly morainic material with a medium texture, clayey, very calcareous, with good water holding capacity and southern, south-west exposure. The date of harvest is decided according to the level of maturity of the grapes. The harvest is done by hand in small containers, very early in the morning, avoiding exposing the grapes to high temperatures so the grapes arrive in the cellar perfectly intact. The vinification is in red with repeated punching down; at the end of fermentation, the wine is decanted into French oak barrels, where it undergoes malolactic fermentation and remains to mature from 18 to 20 months. The Vigneti delle Dolomiti Rosso IGT “Due Rubini” Emma Clauser spends a further period of ageing in the bottle.

Emma Clauser wine is in San Michele all’Adige, on the hill of Sorni, meet the three vineyard plots owned by Molino dei Lessi, belonging to Emma Clauser and her husband Enzo Centofante. About one hectare in total, where the varieties of Cabernet Sauvignon, Lagrein, Riesling and white Manzoni are cultivated according to the rules of organic farming. Moving from the vineyard to the cellar, a totally underground structure dug out of the tuff and inaugurated in the autumn of 2006, the respected enological techniques exclude chemical interventions, to favour physical treatments, such as temperature management, racking and ageing in wood. This is how the approximately 3 thousand bottles a year are born: real rarities, which stand out for their unmatched elegance and a mineral trace that supports the structure of the wines.
