CARSO DOC VITOVSKA WINE FROM FRIULI-VENEZIA GIULIA
(Carso DOC Vitovska from S. Dorligo della Valle, Trieste)
Unlike other varieties, there is no trace of this vine in other Mediterranean regions and its history has been lost in the folds of centuries. Ancient grapes, then rustic, able to withstand the cold winter and drought of the hot season. Recently wine producers are rediscovering it, thanks to a clever recovery work by some farmers who have believed in its potential.
TASTING NOTES – What’s in the glass?
Vitovska retains a pale yellow colour not completely clear. It expresses saline and floral notes from the first breath, such as saltiness, rocks, sulfur and white flower. Furthermore there hints of macerated fruit, such as Williams pear and pineapple in spirit, that make it more tasty and enjoyable. On the palate, Vitovska springs a wide range of mineral notes balanced by roundness, with a fresh and enveloping aftertaste. In addition, each sip ends with a hint of honey that leaves in the mouth a touch of sweetness.
The taste is powerful as well as harmonious, with great texture and length.

PARING – What do I pair with?
Vitovska is an amazing choice to pair with raw and cooked crustaceans, such as oysters, prawns and shrimps. Excellent as an aperitif as well, it achieves a good match also with roasted fish or withe meats.
ABOUT RADO KOCJANCIC
In 1999, Rado Kocjančič began producing with the help of his father and brother Samo, renting several vineyards, renovating the vineyard of the lands around his winery. With the help of the family, 15.000 new vines planted on about 3.3 hectares, and 600 olive trees on another 2 hectares. The winery is located in the former stable of Dolga Krona, where the company produces annually about 15,000 bottles of DOC Carso wine.
WINEMAKING NOTES – How is it made?
The harvest begins in the middle of September and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result, to guarantee that only completely ripe berries go to the fermentation tanks. The maceration lasts approximately a couple of days while the fermentation takes place at the same time in stainless steel tanks. After the wine goes directly in different tanks, where, in conclusion, matures until the following Spring.
Consequently ageing in tanks, Vitovska remains four months more in the bottle before the release.
