The grapes to produce Chardonnay Deep Woods Estate came from select vineyards across the region, a large component of which was hand-picked. The Chardonnay Deep Woods Estate fruit was whole bunch pressed directly to two- and three-year-old French oak barrels with each of the parcels kept separate before blending. The wine was allowed to ferment “wild” using indigenous yeasts and subsequently matured on lees for 6–8 months depending on the parcel. Little or no malolactic fermentation occurred. This Chardonnay is fresh, fulfilling, uncompromising and made true to the Deep Woods Estate “house style”.
Deep Woods Estate is a boutique winery located in in the northern corner of the premium wine-growing region of Margaret River in Western Australia in a region called Yallingup (an aboriginal word meaning “place of love”) — close to the renowned surf break of the same name and the resort town of Dunsborough. Deep Woods Estate is ranked as a 5 Red Star Winery by James Halliday and was named in Ray Jordan’s The West Australian Wine Guide 2017 as Winery of the Year.
