The Fiano di Avellino DOCG “Vino della Stella” Joaquin is produced with grapes grown on calcareous soil at 700 m.a.s.l. The grapes are harvested by hand with a rigorous selection of the best bunches. They are de-stemmed and macerated for 48 hours. Fermentation takes place in stainless steel tanks for 60 days at 18°C. The Fiano di Avellino DOCG “Vino della Stella” Joaquin then undergoes a partial malo-lactic fermentation before aging in stainless steel.
Raffaele Pagano founded his Joaquin winery on a mission: to become the flag bearer for the great wines of Campania – the Fiano & Aglianico. Located in Montefalcione, home to the two DOCG wines, Fiano di Avellino and Aglianico Taurasi, he started with a meticulous study and selection of antique, pre-phylloxera vineyards in the area of Lapio and Montefalcione, known as the habitat of origin of the varieties. In fact, Raffaele has worked tirelessly to reach vinous expressions that are the quintessence of the historic local terroirs.
