The grapes to produce Rosato d’Italia Sollazzo were destemmed and gently crushed, followed by cold soaking which lasted for two days to extract the varietal characteristics. The fermentation of Rosato d’Italia Sollazzo took place with selected yeasts at controlled temperatures of 20 to 24°C, followed by five to seven days’ maceration. The wine was aged in stainless steel and concrete tanks for four months to retain the purity of fruit.
The grapes are predominantly sourced from the rich and fertile region of Emilia Romagna, one of Italy’s most prolific wine regions, located between Tuscany to the south and Lombardy and Veneto to the north. The region’s geographical diversity plays a significant part in creating the different terroirs found in the region. The River Po links the rolling hills and the Apennine peaks to the west of the region, flowing through the low lying plains, to the vineyards influenced by the coastal breezes of the Adriatic Sea to the east. Each terroir imparts its own characteristic to the resulting blend.
Using a great blend of indigenous and classic varietals, Sollazzo is a range of excellent value-for-money wines which are produced for us in a state-of-the-art winery a couple of miles from the great old castled town in Umbria. Non-nonsense, typical, easy drinking, wonderful value for money, these wines are superb examples of modern winemaking at its very best. Highly recommended!
