The Equinotium Mattia Filippi is made of 100% Cabernet Sauvignon from Casteller, at an altitude of 230 metres a.s.l. facing north-south-west-east exposure. The wine is fermented in whole grapes in small containers without the use of pumps, fermentation at low temperatures for 30-40 days. The Equinotium Mattia Filippi is then matured in French oak barrels, ageing on fine fermentation lees for 12-18 months with batonnage. Low content in sulfites.
