The Nosiola grapes of Vigneti delle Dolomiti Frizzante Nosiola Belle Sui Lieviti Francesco Poli are cultivated in the vineyards above the lake of Santa Massenza on calcareous marly soil rich in skeleton; being placed in a very exposed hilly area, the treatments are reduced to a minimum and only with the use of natural substances. Since 2006, biodynamic preparations have been used and green manure is sown. The manual harvest begins in late September and takes place in the morning in the cooler hours followed by crushing with maceration on the skins for a few hours; then soft pressing, fermentation of the must and subsequent maturation on the fine yeasts in stainless steel tanks. Vigneti delle Dolomiti Frizzante IGT “Nosiola Belle Sui Lieviti” Francesco Poli is bottled in spring and re-fermented with the addition of must of Vino Santo Trentino in fermentation with its own spontaneous yeasts.
NOTES: the crown cap is used for the closure, sparkling wine included in the project Bollicine da Uve Italiane, Vini dell’Angelo and Interpretazioni. The vineyards are cultivated according to biodynamic agriculture, enriched with green manures and biodynamic preparations. We thus obtain stronger plants, with greater root development that allow us to minimize treatments based only on natural substances.
“From the 2009 harvest, the Belle Massenza was born, which I created to enhance the Peverella, an old grape variety that has almost disappeared but historically existed. Following the sparkling process in autoclave, I wanted to introduce the Family Method by refermenting the same wine with the addition of Vino Santo Trentino must “With the 2014 vintage the same vinification I reported on Schiava”. FRANCESCO POLI.
The Francesco Poli Winery is located in Santa Massenza: the southern climate meets the continental one, the Mediterranean plants coexist with the alpine ones. It is in this small town of renowned wine-growing and distillation tradition that the Agricultural Company and the Distillery of Francesco and Alessandro Poli are located. Since 1998 the vineyards have been cultivated in organic farming, and for some years biodynamic farming techniques have been used.
