The Moscato Giallo grapes of the Fior d’Arancio Colli Euganei Spumante La Montecchia are cultivated at an altitude ranging from 20 to 120 meters on volcanic soil with tachitic scales and various clays with southern exposure. The harvest is manual in a box with selection in the vineyard; the harvested grapes are cooled to 0.5 ° C then softly pressed to maximize the fruity aromas. The flower must is sent to foam. The Fior d’Arancio Colli Euganei Spumante DOCG La Montecchia is made sparkling with the Martinotti method (Charmat); the must is fermented at 10°C until the desired pressure is reached and then left to rest for 15 days at -2°C, then it is refined in glass.
