The grapes to produce Pinot Grigio Brut Sacchetto were harvested at optimum maturity, destemmed and gently pressed. Maceration at controlled temperatures took place on the skins to obtain the desired level of delicate blush colour. The grapes were pressed to obtain the must which was fermented with selected yeasts. The gently sparkling Pinot Grigio Brut Sacchetto was made following the Charmat long method.
The Pinot Grigio grapes are grown in the Delle Venezie region, which covers the provinces of Veneto, Friuli-Venezia Giulia and Trentino. The grapes are grown in chalky and volcanic soils, which impart elegance and are ideal soils in which to cultivate grapes for sparkling wine. The cool, breezy climate is heavily influenced by the Alps and helps maintain fresh acidity in the wines. The temperature variation between the day and night helps develop aromatic intensity in the grapes. This combination of climate and terroir results in fresh, aromatic and vibrant wines.
Cantina Sacchetto was founded in 1920 and today is run by Filiberto Sacchetto, his son Paolo and daughter Beatrice who oversee all aspects of the winemaking process and aim to produce the best possible examples of wines for which the Veneto region is famous.
