ORGANLEPTIC EXAMINATION: In the mouth it is fresh and mineral, with good body, intensity and persistence. It goes perfectly with succulent meat dishes: beef fillet with balsamic vinegar, for example, or beef fillet with pink pepper.
The Cagnulari CGN Quartomoro is made of 100% Cagnulari grapes. The winery belongs to the Memorie di Vite line, which in the project by Luciana Baso and Piero Cella aims to be the cultural recovery of the purest expression of the main Sardinian vines, with their singularities, and of the terroirs more congenial to them. Therefore vinification as far as possible with native yeasts of grapes in vines from a sapling and fry vines over the age of fifty, without the use of wooden containers and without final filtration. The Cagnulari CGN Quartomoro is obtained from the grapes of the typical red grape of the Sassarese, vinified in purity, from vineyards raised on the calcareous soils of Usini, particularly congenial to this type of vine.
Quartomoro di Sardegna was initially used by Piero Cella himself to experiment and test different ideas to learn more about his own wines. This led him naturally to develop it into what it is today, a kind of ‘workshop of ideas’ where new wines are created.
It is a quintessential selection chosen to represent the true culture of wine in Sardinia.
Quartomoro di Sardegna embodies an intertwining of grapes, experiences and cultures exactly like its birthplace: Arborea, a living synergy between being Sardinian and continental influences. Their mission is to produce wines that best represent one of the most interesting territories in terms of biodiversity: Sardinia. They respect what nature has given us and protect it with minimal intervention in the vineyard and in the cellar with the winemaking.
