The Chardonnay grapes of the Trento Brut Monfort Casata Monfort are grown in the vineyards of Lavis and Meano at an altitude between 300 and 500 meters. The harvest is manual in a box with selection in the vineyard. The vinification takes place with de-stemming and cold maceration of the grapes, temperature and controlled fermentation with a pause on the noble lees for 2-3 months. A small part of the must is directly fermented in 225 liter French barriques and remains there until it is bottled. Trento Brut DOC “Monfort” Casata Monfort is bottled and placed to mature in the cellar at a temperature between 8 and 12 degrees; it will refine on its own yeasts in the bottle for 36 months.
For Casata Monfort wine each generation bears the roots of the previous one, the values transmitted, the experiences lived, the shared projects, but each person in this family has also been able to look forward to the future, the ability to dream and the desire to write a page of the history of this winery. The generational shift is a gesture accompanied, built, never forced, a choice that matures consciously. The growth of the winery is the result of teamwork, made up of dynamic and motivated people, men and women who, in the past and in the present, have shared goals, hopes and results. With these premises, we think to innovate each year by adding new pieces both in the production and marketing side. We love to add a little bit of pepper to our daily work to make it always new every day.
