The Greco di Cantine Scala is cultivated at an altitude of 100-150 meters on sandy and clayey soil. The harvest takes place in the third decade of September, it is manual in a box with selection in the vineyard and the vinification takes place after destemming where the grapes are softly pressed. The must is then seeded with selected yeasts and fermentation at a controlled temperature of 16-18C continues, in order to preserve all the varietal characteristics of the grape. The Greco di Cantine Scala at the end of the alcoholic fermentation is racked and left to mature in stainless steel containers, for 2-3 months, then ages in bottle.
The Scala company covers an area of 60 hectares, of which about 40 are cultivated with specialized vines for the production of high quality grapes and the remaining ones with orchards. The structure of soils rich in clay and calcium, favors the excellent growth of the vine and the complexity of red wines, while the skeletal richness determines a composition of great aromatic complexity in white wines.
