VINIFICATION: after having de-stemmed the grapes and softly pressed, the must is inseminated with selected yeasts and the fermentation at controlled temperature, 16-18C, continues in order to preserve all the varietal characteristics of the vine
MATURATION: at the end of the alcoholic fermentation the wine is decanted and left to rest in stainless steel containers, for 2-3 months.
