The grapes of the Trentino Marzemino Vallarom are grown at an altitude of 250 meters on dolomitic limestone terrain with southern exposure. The harvest is manual in boxes with selection in the vineyard, followed by a maturation of the skins for 4/5 days and in steel for 5/6 months. The Trentino Marzemino Vallarom ages in steel than in glass.
NOTES: Since the 2011 harvest the wines are all BIO certified. From 1999, the year we arrived in Vallarom, we decided to practice organic farming that we believe is more in keeping with our goals and our life choices. We immediately noticed a gradual and vigorous change in the nature that surrounds us. Fundamental to change the characteristics of the estate: the draining soils, the exposure of the vineyards, the surrounding forest and the mild and dry climate conditioned by the Ora del Garda. In the cellar we have not used selected yeasts or other practices that we consider invasive for some time. Barbara and Filippo Scienza
