The Monica MNC Quartomoro is produced from 100% Monica grapes sourced from Soleminis area. The Monica MNC Quartomoro is made from vineyards implanted in 1965 with a soil predominantly od clay and sands. The grapes are manually harvested and the selection of the best butches happens in the vineyard. The wine is fermented below 30C with autochthonous yeast and the macerations are of seven days. The wine is then matured for 6 months is steel and barrique passing at least 4 times. After bottling, the wine is ulteriorly aged for an extra 6 months before release.
Quartomoro di Sardegna was initially used by Piero Cella himself to experiment and test different ideas to learn more about his own wines. This led him naturally to develop it into what it is today, a kind of ‘workshop of ideas’ where new wines are created.
It is a quintessential selection chosen to represent the true culture of wine in Sardinia.

Their mission is to produce wines that best represent one of the most interesting territories in terms of biodiversity: Sardinia. They respect what nature has given us and protect it with minimal intervention in the vineyard and in the cellar with the winemaking.
