HARVEST: Manual in 20 kg box. with selection in the vineyard
VINIFICATION: maceration on the skins for 48 hours with low temperatures of 8/10 degrees, extraction of the must with soft pressing, inoculation selected yeasts and fermentation with controlled temperature of 14/16 degrees. The grapes are vinified separately; in November the three wines are assembled.
MATURATION: in stainless steel tank for 6 months
AGING: in bottle for 2 months
NOTES: TRENTATRE ‘is an aromatic white wine. It is produced with Trentino historical grapes: yellow muscat (50%), nosiola (40%) and a third vine (10%) at the discretion of the producer (eg vanderbara, white lagarino, peverella, red veltliner, etc.). It should have been called TRENTINER but the strict rules on labeling do not allow it. The intention of the five wineries participating in the project (Nicolodi, Francesco Poli, Vivallis, Salizzoni, Vallarom,) is to produce a wine that is an expression of the whole of Trentino (three valleys, three rivers, three vines) and which, through a project and a common commitment, expressing the peculiarities of the various companies that operate there: farms, wine artisans, winemakers and social cellars. The particular and diversified climatic conditions of Trentino (from the Mediterranean one on Lake Garda to the continental one in Val di Cembra), the latitude, the various altimetric levels, the multiple geological components of the land, the traditions underline the nuances of the Trentino wines. aromatic, finesse and elegance. The name TRENTINER would sum up and evoke all this.
