ORGANOLEPTIC EXAMINATION: it is characterized by evident notes on the nose of grapefruit and fresh citrus fruit, to which then add the vanilla and the bread crust. Taste soft, creamy, dry. The non-excessive flint is perceived. Perlage of fine and persistent bubbles.
GRAPES: Riesling Renano, Chardonnay
VINEYARD OF ORIGIN: San Floriano del Collio, 230 m / slm
AGE OF THE VINEYARD: 28 years
YIELD PER HECTARE: q / Ha
LAND: hilly, consisting of layers of clayey marl and sandstone, locally called “ponka”
VINIFICATION: the grapes are harvested and selected manually, then de-stemmed and gently crushed, cooled to 8-10 degrees and macerated in contact with the skins for 24 hours; follows soft pressing.
MATURATION: alcoholic fermentation in stainless steel tanks with controlled temperatures from 16 to 18 degrees after which the maturation takes about 7 months in oak barrels (tonnoux). The second fermentation in bottles with its own yeasts follows
AGING: in bottles at least 24 months, at least 6 months after disgorgement
