TASTING NOTES – What’s in the glass?
Very dark ruby red, deep and impenetrable. It expresses a surprising complexity in the nose which spans from blackberry jam to roses, from nutmeg to pepper, from pine resin to mint, from cloves to cocoa. Smooth, suave and endless on the palate. A tempting freshness balances a tannic structure with a unique density before an unforgettably persistent closure.

ABOUT CANTINE SCHIPPA
The winery is in the centre of a lovely and sweet region: Umbria, fascinating land. Fascinating because of the intense beauty of its landscapes and skylines, its small medieval towns and villages. Schippa’s wines reflect this land which is so discrete, but at the same time, so surprising, the result of a long and complex product development.
WINEMAKING NOTES – How is it made?
The harvest begins in the middle of October and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result to guarantee that only completely ripe berries go to the fermentation tanks. The maceration lasts approximately 15 days while the fermentation takes place at the same time in oak barrels. After the 50% of the wine goes directly in different oak barrels, where, in conclusion, matures for twelve months. Meanwhile, the remaining 50% matures in steel tanks. Consequently ageing in barrels and steel tanks, Montefalco Rosso DOC remains four months more in the bottle before the release.
