TASTING NOTES – What’s in the glass?
Ca Suppiej retains a bright pale yellow colour, with greenish reflections. The most intense aromas are the floral ones, such as broom and acacia. The fruity notes of white peach, pineapple and maracuja perfectly match the floral hints. On the palate, it expresses hints of sage, wild fennel, ginger and white pepper, between volcanic and saline mineral sensations. Each sip is strong and powerful, as well as lightened by the freshness and balanced by the pleasing soft vein that dives into the final.

PARING – What do I pair with?
As a pleasant and very drinkable wine, the Ca’ Suppiej can be enjoyed as an aperitif. It also achieves a good match with pasta dishes, as well as with vegetable soups. In addition, its body is soft enough to make it so enjoyable with shellfish and seafood salad.

WINEMAKING NOTES – How is it made?
The harvest begins in October and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result, to guarantee that only completely ripe berries go to the fermentation tanks. Then, after soft pressing, maceration lasts approximately 15 days while the fermentation takes place at the same time in stainless steel tanks. After filtering operations the wine goes directly in different tanks, where, in conclusion, matures for 6 months. In addition of the finishing step, Dulcamara remains 2 months more in the bottle before the release.
