Trentino Sauvignon DOC “Cascari” 2012 – Longariva
Light straw yellow with light greenish reflections. On the nose various hints of fruit and vegetables: citrus fruits, fig, tropical fruit, elderberry and nettle. On the palate soft, delicate, harmonious with characteristic sensations of fruit reminiscent of basic grapes.
The grapes of Trentino Sauvignon Cascari Longariva are grown in the Collina Zinzéle vineyard, in the Sano area, Municipality of Mori. In 1991, after the reclamation of an ancient terraced vineyard, the land was restored according to the mountain slope and with the innovative technique the “Zinzéle Hill” was built with low rows, arranged in the direction of the maximum slope, high density with the aim to obtain a low yield per vine and a high quality of the grapes. The harvest is manual and the fermentation is in white (without skins) at a controlled temperature for about a week and a half with partial cutting of macerated must. Trentino Sauvignon DOC “Cascari” Longariva is aged in glass.
