ORGANOLEPTIC EXAM: Vermentino Ligurian Riviera of Ponente Maixei is a white wine with a very fresh taste. Floral notes are added to the citrus fruits to complete with the typical salty sea note. It is the typical wine to combine with a baked fish, sea bass, sea bass or sea bream.

VINEYARD OF ORIGIN: the vineyards of our members that cover the most suitable areas of the valley Nervia, Verbone and Empire
SOIL: predominantly clayey-sandy rich in skeleton, with little limestone and pH between sub-alkaline and acid.
TRAINING: sapling or counter-espalier with guyot pruning
HARVEST: manual VINIFICATION: the grapes are conferred by the members in the hours immediately following the harvest and are pressed in an extremely soft way so as not to ruin the skin. Part of the grapes, before the classic white vinification, is macerated with carbon snow for a few hours to accentuate the character and the typicality.
MATURATION: The fermentation takes place at controlled temperature (16-18 ° C) in stainless steel tanks and conducted by selected yeasts. The malolactic fermentation is prevented to preserve the freshness of the product.
AGING: after a short refinement in steel the wine is bottled in the spring following the harvest
