Cannonau di Sardegna DOC “CNS” 2015 – Quartomoroby Valentino Minotti
ORGANOLEPTIC EXAMINATION: it resumes a medium load colour, tending to orange with the evolution. On the nose, it is spicy, fruity and balsamic. In the mouth, it is sapid, warm and of medium opulence, good softness and length.
The Cannonau CNS Quartomoro is produced from 100% Cannonau grapes sourced from Dorgali area. The Monica MNC Quartomoro is made from vineyards implanted in 1950 with a soil predominantly od clay and sands. The grapes are manually harvested and the selection of the best butches happens in the vineyard. The wine is fermented below 30C with autochthonous yeast and the macerations are of seven days. The wine is then matured for 6 months is steel and barrique passing at least 4 times. After bottling, the wine is ulteriorly aged for an extra 6 months before release.
Quartomoro di Sardegna was initially used by Piero Cella himself to experiment and test different ideas to learn more about his own wines. This led him naturally to develop it into what it is today, a kind of ‘workshop of ideas’ where new wines are created.
It is a quintessential selection chosen to represent the true culture of wine in Sardinia.
