Collio Pinot Grigio DOC 2017 – Dragaby Valentino Minotti
ORGANOLEPTIC EXAMINATION: the wine has a fruity and floral scent, takes a wide and pungent bouquet of dry hay, toasted almonds, jasmine and acacia. Mineral, fresh, sapid, persistent and balanced taste.

HARVEST: manual, August
VINIFICATION: the grapes are harvested and selected manually, then de-stemmed and gently crushed, cooled to 8-10 degrees and macerated in contact with the skins for 24 hours. The soft pressing follows and then the alcoholic fermentation begins in stainless steel tanks with controlled temperatures of 16 to 18 degrees.
MATURATION: about 7 months in contact with the yeasts until bottling in steel barrels, always at a controlled temperature
