PRIMITIVO IGT WINE FROM PUGLIA
(Primitivo IGT from Orta Nova, Foggia)
Primitivo is a red Apulian vine, very common throughout the region. The origin of the name is probably linked to the early biological cycle and is generally harvested in the first decade of September. Genetically identical to Californian Zinfandel.
TASTING NOTES – What’s in the glass?
Primitivo IGT retains a dark ruby red colour, with lively purple shades. It expresses intense fruity and floral notes, such as blackberry, ripe cherries and geranium. Also, a very clear spicy note presents a hint of black pepper and cocoa powder. On the palate is elegant and powerful, as well as juicy and harmonious. Furthermore, it has an amazing consistency and length. Tannins are smooth as a result to leave in the mouth a touch of sweetness. In conclusion, it has long persistence and amazing texture. Very balanced overall.

PARING – What do I pair with?
Those who enjoy pairing their food with red wine have found the perfect partner. Primitivo IGT goes well both with pasta courses and main courses, better if red meat-based. Aged cheeses or cold cuts are also an ideal combination.

WINEMAKING NOTES – How is it made?
The harvest begins in the middle of September and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result, to guarantee that only completely ripe berries go to the fermentation tanks. The maceration lasts approximately a couple of hours while the fermentation takes place at the same time in stainless steel tanks. After the wine goes directly in different tanks, where, in conclusion, matures for 3 months.
Consequently ageing, Primitivo IGT remains 2 months more in the bottle before the release.
