ORGANIC EXAMINATION: The color is straw yellow, veiled by its yeasts with a thick and captivating foam. On the nose, it gives aromas from white and yellow flowers with citrus and spicy notes. On the palate, it is fresh and acid with lively and enveloping bubbles. After decanting, if properly “scaraffato”, it can be bright, slightly changing aesthetic and organoleptic appearance, resulting in cleaner to the eyes and nose, more acidic and less round in the mouth.
The Z Frizzante Quartomoro is a blend of Vermentino and Malvasia grapes sourced from the Alto Campidano (Or). The soil is predominantly made of a medium-textured clay, sand with a lot of oxidant decomposed skeletons. The Z Frizzante Quartomoro is fermented at a temperature of 18-20 ° C, maturation in steel, second fermentation in the bottle at the end of summer. The wine is then matured for a minimum of 6 months in steel and aged for a minimum of 6 months in the bottle.
Quartomoro di Sardegna was initially used by Piero Cella himself to experiment and test different ideas to learn more about his own wines. This led him naturally to develop it into what it is today, a kind of ‘workshop of ideas’ where new wines are created.
It is a quintessential selection chosen to represent the true culture of wine in Sardinia.
