ABOUT MADONNA DEL LATTE
Madonna del Latte Estate’s location is between Orvieto’s hills and Bolsena Lake. Manuela Zardo and Hellmuth Zwecker founded the winery in 2000, after years of travelling all over Italy as food and wine writers. They find the ideal location in Umbria because the climate conditions and the soil are unique in the world. They produce their wines with deep respect for the environment, so they don’t use herbicides, synthetic fertilizers or insecticides.
WINEMAKING NOTES – How is it made?
The harvest begins in the middle of October and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result to guarantee that only completely ripe berries go to the fermentation tanks. After the soft pressing, the fermentation occurs in addition of yeast cultures in steel tanks while maceration with skins takes place at the same time. Rosso IGT “Castelletto di Sucano” ageing starts in stainless steel tanks for six to eight months.
Consequently ageing, it remains four months more in the bottle before the release.
