ROSSO IGT “OT” WINE FROM TOSCANA

It is the Estate’s flagship wine, made exclusively from the best bunches of the OT vineyard, created in 2001. While every vintage represents the epitome of what the vineyard has to offer, the blend never changes.

TASTING NOTES – What’s in the glass?
OT retains a deeply red inky colour, with purple shades. In the nose, it displays seductive aromas of exotic spices, such as freshly cracked pepper and cloves. Fruity aromas spring at a later time, reminding to a sweet dash of macerated red berries and cherries. Herbaceous undertones underly the complexity, adding to its bouquet a touch of rosemary and, above all, sage. On the palate, it is broad and concentrated, absolutely powerful. Its taste is similar to the nose but, in addition, it has some hints of dried fruits, such as toasted almond and chestnut. OT is intense and deep, flavoured but balanced by fresh acidity in the final. Tannins are naturally smooth and silky, as a result, to make this wine soft and harmonious.

PARING – What do I pair with?
Certainly, you can not deny the joy of drinking a glass of OT if you are eating a grilled steak or a slice of extra-aged-cheese. But I was very impressed by a producer’s suggestion: try it with fresh fruit. I can assure you will not regret it.

WINEMAKING NOTES – How is it made?
The harvest begins in the second half of September and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result to guarantee that only completely ripe berries go to the fermentation tanks. The maceration lasts approximately 25 days while the fermentation takes place at the same time in French oak barrels. Then, the wine goes directly into 2nd or 3rd use oak barrels, where, in conclusion, it matures for 12 months. Consequently, OT remains 36 months more in the bottle before the release.
