“La Beryl Blanc” Paarl 2022 – Fairview (500ml)

To produce the “La Beryl Blanc” Paarl Fairview individual bunches were hand harvested once they were perfectly ripe over a three-day period. The grapes were transferred to a well-ventilated barn where they were laid out on beds of straw to dry for three to four weeks. During this time, the grapes lost about 75% of their volume, intensifying flavour concentration and sweetness. The grapes were pressed and the juice fermented in temperature-controlled stainless-steel tanks prior to filtration and bottling.

Fairview ‘La Beryl Blanc’ is a traditional straw-dried sweet wine named after Charles Back’s mother. The wine was produced using Chenin Blanc and Muscat grapes from the Fairview vineyard planted on decomposed granite soils.

This dessert wine has bold and assertive aromas of ripe apricot, quince and honey on the nose. Flavours of tropical fruit and citrus and a well-balanced acidity give this wine an excellent structure.
