Most of the grapes of Sauvignon Blanc Tierra Antica were hand-harvested and only a small fraction of the harvest was picked by machine. Once received at the winery the bunches were carefully selected on the sorting table and pressed. Fermentation took place in stainless steel tanks at controlled temperatures of between 12° to 16°C for a period of 14 to 16 days. Temperatures were carefully monitored throughout the vinification in order to preserve the delicate aromatic expression. Sauvignon Blanc Tierra Antica was stabilised for between 15 to 20 days at 4°C and then earth-filtered, prior to bottling.
The grapes are sourced from the Central Valley, where the vines are vertically positioned and spaced at 1.5 x 2.2 m. Drip irrigation takes place to ensure the vines receive the optimum amount of water for vine growth and health. The crops are green harvested to eliminate short shoots and promote a healthy canopy.
