The grapes to produce Minervois “Cuvée Selection” Domaine la Rouviole were destemmed and each variety was traditionally vinified. Fermentation took place in stainless steel tanks lasting for two weeks. Minervois “Cuvée Selection” Domaine la Rouviole wine was then aged for one year in French oak barrels in a combination of new, second and third use barrels, with a proportion aged in stainless steel tank. The wines were then blended.
Produced from 30 year old vines, which are grown in chalk and clay soils and produce yields of 40 hectolitres per hectare. The vineyard is managed using strict organic processes. The grapes are hand-harvested in September at optimum levels of maturity and phenolic ripeness.
Domaine la Rouviole, independent family owned estate which was bought by the Léonor family in 1956, is located in the renowned Cru La Livinière area of Minervois. Wines are made from blends of Syrah, Grenache, Cinsault and Carignan from the best and oldest plots of the estate. Domaine la Rouviole gives great care to hand harvest the grapes at optimum ripeness and to express the terroir of the area. The wines have been certified as organic since the 2011 vintage.
