The Sangiovese grapes of Chianti Riserva DOCG Bonacchi were manually harvested and were immediately transferred to temperature controlled stainless steel tanks for fermentation. Daily pumping over and rack and return techniques obtain delicate extraction of flavour, colour and tannins. Malolactic fermentation followed fermentation spontaneously. Chianti Riserva DOCG Bonacchi spent one year in stainless steel retaining the purity of fruit, before being decanted to a combination of large French oak barrels for between six to 12 months.
The vines are cordon spur trained vines and are planted in marl and limestone soils. The grapes are harvested using traditional methods once they have reached optimal ripeness, ensuring top quality in the final product.
