The Groppello and Syrah grapes of the Veneto Rosso Sarco Fattoria Sociale La Costa come from the area of Belmonte (Groppello) and Costa (Syrah) on land with volcanic substrate composed of breccias and tuffs with clayey cover (Belmonte area); earthy-clayey layer for 50/60 cm and underlying limestone-sandstone rocky base called in the Vicenza jargon “Soio” (Costa area). During the harvest, the grapes selected and harvested by hand are monitored daily in the pre-harvest period in order to capture the favourable moment of sugar acidity balance with particular attention to the first parameter (acidity) in order to obtain a fresh and lively wine. The vinification is in steel at a controlled temperature ranging between 23 ° C and 25 ° C in order to preserve the fruity and young aromas; the fermentation with colour taking lasts for about 13/18 days with double daily fulling of the fermenting must. The Veneto Rosso IGT “Sarco” Fattoria Sociale La Costa carries out the natural malolactic fermentation and refines for a short period in steel before being bottled.
