WINEMAKING NOTES – How is it made?
The harvest begins in the first week of October and farmers pick grapes by hand and press them with feet, as a result, to leave many berries intact, so a partial process of carbonic maceration begins. Fermentation and skins contact takes place at the same time with indigenous yeast (spontaneous) in small stainless steel tanks. This step lasts approximately 15 days. The aging starts on fine lees with numerous batonnage in steel tanks for 9 months. Bottling process happens just in days of moon waning (according to the biodynamic lunar calendar). After finishing in steel tanks, Rosso IGT “Checcarello” matures three months more in cement tanks before bottling.
HARVEST: from September 10th to 20th
SOIL: Alternations of sandstone and marne.
