About this wine

The grapes to produce Barbera Piemonte DOC “Ottone 1°” San Silvestro were crushed and destemmed and then fermented with selected yeasts in stainless steel tanks at a controlled temperature of 28 to 30°C. Fermentation of Barbera Piemonte DOC “Ottone 1°” San Silvestro was followed by maceration on the skins lasting eight days with daily pumping over of the cap. Natural malolactic conversion took place in the spring following the vintage and then the wine was left to rest in temperature controlled tanks for six months prior to being bottled. This wine is named after Otto I, Grand Emperor of Saxony, who was one of the protagonists of the legend of Aleramo and the foundation of Monferrato region. Barbera is the most popular vine variety in Piedmont, renowned for its strength and productivity. The compact structure of its clusters makes it easily recognisable and wines made from Barbera typically present lovely freshness, due to the high acidity naturally occurring in this variety. The vines producing this wine are grown in marl clay and sand soils. This vigorous vine is carefully managed in the vineyards, in order to produce concentrated flavours.
San Silvestro is located in the territory of the Commune of Novello. The grapes are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. San Silvestro represents the continuation of a project begun by Giovanni Sartirano which has been passed down through four generations. Today it is run by cousins Paolo and Guido Sartirano and San Silvestro has gradually expanded beyond the local market and their wines can be found around the world.
