The grapes to produce Bourgogne Pinot Noir Domaine René Monnier were vinified using traditional methods. Prefermentation maceration lasted for six days to extract aromas, flavour and fine tannins. Bourgogne Pinot Noir Domaine René Monnier took place in stainless steel tanks over two weeks followed by maturation in French oak barrels for 10 months, of which 30% was new.
The vineyards are farmed according to “la lutte raisonnée”, using sustainable agriculture methods, reducing the use of chemicals in order to respect the land and its environment. The soils in the vineyard are limestone mixed with marl, retaining moisture in dry weather, but also offering good drainage in cooler weather.
