To produce Garnacha La Multa Old Vine El Escocés Volante alcoholic fermentation is carried out at a controlled temperature at 28 degrees Celsius for 7 days with delistage and pigeage for the extraction of color and gentle tannin followed by a short maceration. Destemming of the skins using only draining wine followed by complete malolactic fermentation. The wine is then cold stabilized and subjected to fine ground filtration before membrane filtration.
Grown on old bush vines, in Arcillo – calcaire (chalk and clay soils) situated on the slopes of the Ribota valley of the Calatayud DO at an altitude of 700 – 900m above sea level. Free draining soils combined with minimal rainfall and significant differences in day and night time temperature gives rise to wines with excellent colour , aroma and distinctive varietal aromas.
