The grapes to produce Nero d’Avola “The Dark Prince” Fox Gordon were destemmed and the underwent a cold soak for one week. Fermentation took place in stainless steel and lasted for two weeks. Nero d’Avola “The Dark Prince” Fox Gordon was then transferred to two and three year old French oak barrels for a period of 12 months, adding subtle oak complexity. The wine was bottled unfiltered.
The vines are approximately 10 years old and are planted at the top of a hill at an altitude of 480 metres above sea level. It is a rocky site, which suits this very vigorous variety as the site has very little top soil, slowing down the vigour.
