The super ripe Garganega grapes of Recioto di Soave DOCG “La Broia” Roccolo Grassi were picked during the third week of September and dried naturally for five to six months in a humidity and heat controlled area of the winery. The “raisins” were then pressed and very slowly fermented at 15 to 16°C in French 225 litre oak barrels over a period of 60 to 90 days. Recioto di Soave DOCG “La Broia” Roccolo Grassi was matured for 18 months in French oak barrels, of which 20% were new and 80% second passage, before a further 24 months bottle ageing.
The grapes are grown in the south-east facing La Broia vineyard, which comprises two hectares of vines situated at an altitude of 100 metres above sea level. The Guyot trained vines are planted to a density of 7,000 vines per hectare and yield between 1.2 and 1.5 kg per plant. The alluvial soils are very rich in limestone.
Roccolo Grassi was established in 1996 by Bruno Sartori and his two children Francesca and Marco. Based in Veneto, they produce wines of unique character and strong personality, which are expressive of their origins. Winemaker Marco Sartori is one of hottest talents in the region. His philosophy is very simple; yields in the vineyard are significantly reduced to obtain a fabulous fruit concentration. The 14 hectares of Roccolo Grassi vines are farmed sustainably and minimal intervention takes place in the winery. The result is a collection of world class wines distinguished by their pure elegance.
