The Vernaccia di San Gimignano DOCG La Lastra, like all other Vernaccia, is the only white wine from Tuscany that can boast the DOCG designation. In a land mainly of reds, it is an excellence historically cultivated in the San Gimignano area. After the soft pressing of the grapes, a cold pre-fermentation maceration is carried out. Fermentation takes place in stainless steel containers at a controlled temperature of 16 ° C for a duration of about 15 days. The wine then matures in steel and is bottled starting from the month of March following the harvest.
The La Lastra Project was born by the will of Renato Spanu and his wife Nadia Betti, both from Trentino and passionate about this corner of Tuscany. After numerous experiences as consultants in companies in the region, in 1994 they decided to start producing wine themselves. With the help of their friend and winemaker Enrico Paternoster they began to produce Veranccia in a modern style from a small rented farm in the hills of San Gimignano. The characteristic that immediately distinguished the wines of the La Lastra winery is definitely the territoriality. Thanks to variable altitudes, between 250 and 320 meters, different microclimates and a unique territory for its richness in skeleton, clays and marine sediments. The use of technology in the cellar is aimed at improving and developing what nature has offered; for these reasons, the wines of La Lastra have a modern imprint, but with solid roots in tradition and in the territory.
