The grapes to produce Volnay 1er Cru Clos des Chênes Domaine René Monnier were meticulously sorted and then underwent traditional vinification methods. Fermentation of Volnay 1er Cru Clos des Chênes Domaine René Monnier off in temperature controlled stainless steel tanks before being transferred to oak casks of which 25% were new. The wine underwent regular bâtonnage of its fine lees adding complexity and texture to the resulting wine. The wine completed malolactic fermentation and was then aged for 10 months in French oak barrels before being gently fined and filtered prior to bottling.
The Pinot Noir vines were planted in 1936 and are low yielding, producing a rich, concentrated style of Volnay. Grown in the Premier Cru named plot of Clos des Chênes in Volnay, the vines are cultivated according to “la lutte raisonnée”, using sustainable agricultural methods and reducing the amount of chemicals, in order to respect the land and its environment. The soils are predominantly limestone and clay.
