The grapes of Vigneti delle Dolomiti Pinot Grigio Ramato Casata Monfort are grown in the area of San Lazzaro di Meano (TN) at an altitude of 250 meters on sandy soil with southern exposure. The harvest is manual in a box with selection in the vineyard. After a cold maceration of the grapes for about 6 hours in a press in a closed environment, white vinification follows and fermentation at a controlled temperature with selected yeasts. The Vigneti delle Dolomiti IGT Pinot Grigio Ramato Casale Monfort ages in steel for about 5 months then refines in bottle for 2 months.
For Casata Monfort wine each generation bears the roots of the previous one, the values transmitted, the experiences lived, the shared projects, but each person in this family has also been able to look forward to the future, the ability to dream and the desire to write a page of the history of this winery. The generational shift is a gesture accompanied, built, never forced, a choice that matures consciously. The growth of the winery is the result of teamwork, made up of dynamic and motivated people, men and women who, in the past and in the present, have shared goals, hopes and results. With these premises, we think to innovate each year by adding new pieces both in the production and marketing side. We love to add a little bit of pepper to our daily work to make it always new every day.
