VINIFICATION: after having de-stemmed the grapes and softly pressed, the must continues fermentation at a controlled temperature, 16-18 ° C, in order to preserve all the varietal characteristics of the vine.
MATURATION: at the end of the alcoholic fermentation the wine is decanted and left to rest in stainless steel containers, for 3 months.

Territory The Scala company covers an area of 60 hectares, of which about 40 are cultivated with specialized vines for the production of high quality grapes and the remaining ones with orchards. The structure of soils rich in clay and calcium, favors the excellent growth of the vine and the complexity of red wines, while the skeletal richness determines a composition of great aromatic complexity in white wines.
