The vinification process is very complex as Chardonnay “Prima Nature” Gérard Bertrand is vinified without the use of sulphur or other additives. The grapes were pressed immediately, with cold must settling in order to encourage the oxide compounds in the must to stabilise naturally. Alcoholic fermentation was very short and took place in a controlled environment with temperatures restricted to 18°C. Chardonnay “Prima Nature” Gérard Bertrand was purified by racking, before malolactic fermentation and a further racking phase took place at controlled temperatures. The wine was bottled relatively early, to preserve its full aromatic character.
The vines are organic, they are grown using sustainable methods and have beenawarded the Terra Vitis accreditation. The work undertaken in the vineyard is crucial. A precise and meticulous selection of the plots most suitable for producing this type of wine is undertaken, as it is vinified without the addition of sulphur or other additives. 90% of the final result depends on this painstaking work, as the vines must be in perfect health, with strong, fresh, dense foliage and selecting grapes which have reached optimal maturity. The window for successful harvesting of the fruit is very narrow, the balance between acidity and sweetness and the maturity of the tannins are critical for this type of wine.
